Il Pampero has announced the appointment of Head Chef, Matteo D’Elia.

Hailing from Rome, Italy, Matteo has studied Italian cuisine at a number of top hospitality schools and worked across a range of Rome’s five-star hotels including Baglioni Hotel Regina, Hotel Imperiale and Hotel delle Minerve.

After spending some time working at Roberto’s Restaurant at the Hilton Amsterdam and then the two-Michelin starred Spectrum at the Waldorf Astoria Amsterdam, Matteo travelled to London where he has worked at Claude Bosi at Bibendum and Galvin at Windows.

Under his direction at il Pampero, savour a selection of authentic Italian dishes with modern techniques from the seasonal a la carte menu including a light starter of Beetroot Ribbons with Goat’s Cheese foam and Lovage; Carbonara Faggotini, sumptuous pasta parcels filled with creamy carbonara; and of course, Chef’s signature Tiramisù.
